After some poking around I think the solution to an unstable mediamtx on Pi Zero W is dropping arm_freq in boot config.txt. And possibly a slight increase in voltage. Also, if the PSU is sketchy that can add to the instability. The bottom line is the early Pi Zero IS probably marginal for this task. Also guessing if you use the later, more power hungry camera modules this may get worse. I'm not sure if Bookworm is better or worse as far as this situation goes.
